n una olla de cocimiento lento, cocine la mano de piedra unas 7 horas, de un día para otro. Cúbrala con agua y agregue los olores de su gusto. Para darle mejor sabor mientras se cocina, agregue una ramita de romero, apio, unos dientes de ajo y sal al gusto. Antes de usarla, retírela de la olla y déjela enfriarse un poco, para poderla rebanar con facilidad.
Por otro lado en una olla mediana y precalentada agregue el aceite de oliva, el ajo, la cebolla y el romero. Mueva lentamente y cocine hasta que los ingredientes estén dorados.
Agregue el tomate, la paprika, el caldo y salpimiente al gusto. Reduzca la temperatura del fuego, deje hervir durante 10 minutos y agregue la maicena disuelta en agua para que se espese la salsa.
Por último añada los medallones de mano de piedra para obtener un mejor sabor.
